organic eggplantAlderman Farms offers our consumers a fancy eggplant that is richly dark in color. Our crop produces eggplant that is shiny in appearance and with a superior delicate taste. Perfected on our Florida farm, the eggplant thrives in tropical climes, as the plant is native to India and has been cultivated in southern and eastern Asia since prehistory.

Eggplants belong to the nightshade family of vegetables, which also includes tomatoes, sweet peppers and potatoes. They grow in a manner much like tomatoes, hanging from the vines of a plant that grows several feet in height. While the different varieties do range slightly in taste and texture, one can generally describe the eggplant as having a pleasantly bitter taste and spongy texture. Desired for its delicate yet meaty texture, eggplant finds its way to many tables because the eggplant flesh becomes tender when cooked and develops a rich, complex flavor. The fruit is capable of absorbing large amounts of cooking fats and sauces, allowing for very rich dishes.


The fruit flesh is smooth; as in the tomato, with numerous seeds that are soft and edible along with the rest of the fruit. The thin skin is also edible, so peeling is not required. Eggplant is very versatile in its manner of cooking and can be grilled and mashed, stuffed with meat, rice, or other fillings and then baked. Eggplant can also be blended, deep-fried stewed, or even roasted in its skin until charred, so that the pulp can be removed and blended with other ingredients such as lemon, tahini, and garlic, as in Greek or Middle Eastern cuisine. Our Eggplant is available all season long from early November - end of May and is packed in sturdy bushel boxes to ensure safe-handling for shipping to our markets.
